Ingredients

For the Salad:

  • 1 lb ground beef

  • 1 packet taco seasoning

  • ¼ cup water

  • 1 head romaine lettuce, chopped

  • 2 cups cherry tomatoes, halved

  • 1 cup shredded Cheddar cheese

  • ½ cup red onion, diced

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn kernels (fresh, canned, or frozen)

  • 2 cups crushed Doritos (nacho cheese flavor)

For the Dressing:

  • 1 cup Catalina dressing (or ranch dressing)

  • Juice of 1 lime (optional)


Instructions

  1. Cook the Ground Beef:

    • In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula.

    • Drain excess fat.

    • Add taco seasoning and water, stirring to coat the beef. Simmer 2–3 minutes. Remove from heat and let cool slightly.

  2. Prepare the Salad:

    • In a large bowl, combine lettuce, cherry tomatoes, shredded cheese, red onion, black beans, and corn. Toss to mix evenly.

  3. Add Beef & Doritos:

    • Add the seasoned beef to the salad and toss.

    • Just before serving, sprinkle crushed Doritos on top to keep them crunchy.

  4. Dress the Salad:

    • Pour the Catalina dressing over the salad and gently toss to coat.

    • Optional: Add a squeeze of lime juice for extra tang.

  5. Serve:

    • Serve immediately while the Doritos are still crispy.
